In Ayurveda, summer also known as Pitta season is governed by the fire element. Foods that are sweet, bitter and astringent are favored to balance heat in the body. We created a cooling tea recipe made with Rose, Hibiscus and Tulsi. These Ayurvedic herbs are commonly used in beauty formulations for their nourishing skin and hair benefits. Slightly sweetened with a Rose simple syrup, finished off with a spritz of Bergamot and Neroli bitters, garnished with a sprig of mint and served over ice. Makes 16 cups/ 1 cup per serving
Ingredients
1 1/2 cups dried Rose petals
1/2 cup dried Tulsi
1/4 cup dried Hibiscus
1 gallon filtered water
Garnish
Rose simple syrup (see recipe below)
Bergamot & Neroli bitter water (see recipe below)
fresh organic mint leaves
dried Rose petals
Directions
- Add all ingredients in a large saucepan. Bring to boil.
- Reduce heat, cover and simmer for 30-45 mins. Leave to infuse overnight. If the tea is too strong you can add more water to dilute.
- Strain into large carafe.
- Serve 1 cup tea with Rose simple syrup (add till desired sweetness), 3 spritz bitters, one sprig of mint, dried Rose petals over ice.
- Refrigerate batch for up to 5 days.
Rose simple syrup
Ingredients
8oz filtered water
32oz light organic agave
1 cup dried Rose petals
Directions
- In a medium saucepan add water, agave and dried Rose petals over medium heat, bring to a boil. Reduce heat and simmer for about 30 minutes, as this draws out the therapeutic properties. The end result should have very little water, as you want a strong and dense liquid.
- Turn heat off, cover and cool to room temperature. Allow to macerate overnight.
- Strain into a glass bottle. Store in the fridge. Use as needed.
Garnish
1oz Bergamot bitters
1oz Neroli (orange blossom) water
small spray or tincture bottle
1. In a small spray or tincture bottle add Bergamot and Neroli. Shake well. Store in a cool, dry place away from sun and humidity. Or store in the fridge.
